Llegar de la escuela y encontrarse con un plato de pasta con salsa boloñesa es de los recuerdos mas gratos de mi infancia.
Aquí, va llegando el frío y creo que eso potenciará la caricia emocional y el registro en la memoria.

Para preparar la salsa boloña: sofríes media cebolla grande, dos dientes de ajo y una zanahoria, todo cortado en cuadritos pequeños.
Retiras la olla del fuego y agregas la carne molida (250grs de carne de res y 250grs de carne de cerdo. También la he hecho solo con carne de res) simultáneamente con 2 tazas de tomate licuado, 2 cucharadas de pasta de tomate y una taza de vino tinto (opcional) se mezcla bien en frio para que la carne quede suelta y no se cocine aglutinada, de vuelta al fuego (medio alto). Se agrega sal, pimienta, orégano (o albahaca, una de las dos) y toquecito de canela. Se baja a llama media baja y se cocina por lo menos una hora o hasta que reduzca el líquido.
